From the desk of Dr. Kevin, MD
“Freezing turns that sourdough bread into a resistant-ass starch, basically prebiotic gold for your gut.”
What Happens If You Stop Eating Bread for 14 Days?
Hello it’s Dr. Kevin Cutthebul, MD and you’re reading The Saturday Scalpel.
Now, put the toast down.
Yes, you.
This is an intervention.
Today’s episode of “What If You Stopped Doing the Thing That’s Quietly S***ing You” is about bread.
Not artisanal sourdough kissed by a Parisian baker at sunrise, because that’s actually good for you and I have added the secret recipe below.
(Yes, you can download it for free.)
I’m talking about modern, factory-made, shelf-stable, mood-destroying bread.
Let’s run a 14-day experiment.
No bread. No buns.No wraps pretending they’re “high protein.”
Just… stop.
Here’s what actually happens when you ghost bread for two weeks.
First: what the hell is even in bread?
Besides vibes and nostalgia?
Most modern bread contains:
Gluten (the protein that half your gut is beefing with)
Refined grains (basically sugar wearing a trench coat)
Added sugar (why is this even here?)
Starch (blood sugar go brrrr)
Texture conditioners & mold inhibitors
Phytates (nutrient thieves that block zinc, calcium, and iron)
Glyphosate (yes, the weed killer… surprise!)
So yeah. Your body isn’t thrilled.

Day 3–5: The Bloat Leaves the Group Chat
This is the first thing people notice.
Less bloating → Less “why do I look six months pregnant after lunch?”→Less gut inflammation.
Why?
Because a lot of people either have gluten intolerance or straight-up sensitivity, even if they don’t get dramatic symptoms. Add refined carbs fermenting in your gut like you’ve been brewing kombucha in your intestines.
Remove bread → inflammation drops → pants fit again.
Magic?
No. I call it biology.
Minerals: Unlocked
Phytates in bread bind to zinc, calcium, and iron and escort them directly to the exit.
You stop eating bread → suddenly your body can absorb minerals like it’s supposed to.
Zinc = immune system + hormones
Iron = oxygen + energy
Calcium = bones that don’t sound like bubble wrap
Crazy concept: Ready?
Eating less junk helps nutrients work.
Your Brain Stops Lagging
Around week one, people report:
Less brain fog
Better focus
Fewer headaches
Improved memory
Not because bread is evil, but because blood sugar spikes and gut inflammation absolutely mess with your brain.
There’s a direct gut-brain connection. When your gut is mad, your brain acts like it hasn’t slept in three days.
Bonus: some people with ADHD notice fewer symptoms.
No, bread doesn’t cause ADHD.
But chaos carbs don’t exactly help focus either.
Mood: Surprisingly Stable
Less bread → fewer glucose rollercoasters → fewer emotional hostage situations.
People feel:
Less irritable
Less anxious
Less “why am I angry at my email?”
Your mood isn’t just psychological.
It’s metabolic.
What you ate an hour ago matters.
Pain and Inflammation Calm Down
If it ends in -itis, it usually likes inflammation.
Gluten + refined carbs + sugar = inflammation party.
Remove them and suddenly:
Joint pain eases
Fibromyalgia flares chill the f*** out
Chronic aches calm down
Not cured.
Just… less loud.
Weight Loss (Especially Belly Fat)
Bread spikes insulin.
Insulin tells your body to store fat… especially around the belly.
Lower insulin → easier fat loss → waistline stops fighting you.
No starvation.
Zero suffering.
Just fewer insulin tantrums.
Energy Goes Up (Shockingly)
When your blood sugar stops crashing every three hours, your energy stabilizes.
You’re not wired.
You’re not exhausted.
You’re just… functional.
Disgusting, I know….
Blood Sugar & Heart Stuff
In 14 days:
Blood sugar readings improve
Diabetics often see fewer symptoms
A1c won’t drop yet (that’s a 3-month average), but the trend starts immediately.
Also:
LDL oxidation decreases
Arteries take a break from being inflamed
That’s good.
Very good.
“Don’t die early” good.
Vitamins Come Back Online
Refined grains deplete vitamin E and B vitamins.
You cut bread → levels recover →
Better endurance
Better heart function
Less oxidative stress
Vitamin E is a major antioxidant protecting your arteries from turning into plaque museums.
So yeah. Other than less bloating, clearer thinking, better mood, less pain, more energy, improved blood sugar, easier fat loss, better heart health, and improved nutrient absorption…
I can’t think of any benefits.
Try it for 14 days.
Not forever.
Just long enough to see what changes.
And if you feel dramatically better? Send me an email, I read them all.
Your body just sent you feedback.
Now excuse me while I go make enemies in the bread aisle.
Until next Saturday,
Kevin
